Poblano Black Bean Veggie Burgers with Elote Salsa

Memorial Day weekend basically means one thing – the beginning of BURGER SEASON!!!
Poblano Black Bean Veggie Burgers with Elote Salsa
You either love it or you hate it.
Honestly, when I was an omnivore I hated it because my parents took it a little too far and literally made burgers for dinner every night for the next three months. I think anyone could see how that added up to way too much ground beef even for the most ardent of meat lovers, but take into consideration that I basically had vegetarian taste buds that just hadn’t, well, fully budded yet.
Yup. It was torture.

But now as a vegetarian I LOVE it. Veggie burgers are just so much more versatile than meat burgers, in my opinion.
There are no rules for them and people have no preconceived notions about how they should taste.
Meaning they can taste like anything. You can combine any flavors you want, come up with burger concepts that are really pretty out there and absolutely no one minds. In fact, people tend to like them more the more unique and off the beaten path they are.
LOVE.

The only downside to veggie burgers is that they are usually not structurally sound enough to actually be cooked on the grill and so you miss out on those delicious hints of smoke.
Heeeeyyyoooooo!!!!
Not anymore.
These black bean veggie burgers right here are super sturdy and are filled with the sultry flavors of poblano peppers so that whether you cook them on the grill or on the stovetop, they still carry that smoky umami-ness that most people seem to love about meat burgers.
ALSO because street food is the next big thing and is totally #TrendingInTheKitchen right now, I topped them with my new favorite thing.
ELOTE SALSA. Also known as Mexican street corn salsa. Also known as crack.
Seriously, this stuff is so good. It’s everything you love about Mexican street corn (so…the sweet corn kernels paired with salty cotija cheese crumbles and spicy chili powder) but easier to eat and absolutely delicious when smothering your new favorite veggie burger.
I’d be hard pressed to eat burgers (or corn) any other way again.

Whenever I’m cooking with such bold flavors, I reach for my bottle of Pompeian Smooth Extra Virgin Olive Oil. It has a subtle, almost delicate flavor and is extremely low in acidity, making it perfect for using in dishes where you want it to take a back seat to the other flavors, such as sautes, sauces, and stir fries.
For this meal, I used it in the burgers themselves, where it blended in seamlessly with the other flavors and spices, and also to saute to the burgers on the stove. The oil does have a hint of spiciness to it, which is just enough so that you know it’s there but not so much so that it takes away from everything else that’s going on. I honestly almost never cook with canola, vegetable, or other more “neutral” flavored oil because I love the flavor of the Pompeian Smooth Extra Virgin Olive Oil so much that I never feel the need to reach for anything else!

Hearty black bean veggie burgers stuffed with smoky poblano peppers and topped with an elote (or Mexican street corn) salsa! Perfect to welcome summer this Memorial Day weekend.
Yield: 6 servings
Ingredients
For the veggie burgers
  • 2 (15 oz) cans black beans, rinsed
  • 2 large eggs
  • 4 tbsp Pompeian Smooth Extra Virgin Olive Oil, divided
  • 1 tsp ground cumin
  • ¼ tsp salt
  • ? tsp cayenne pepper
  • 1 cup panko bread crumbs
  • 1 poblano pepper, seeded and finely chopped
  • ¼ cup minced cilantro
For the elote salsa
  • 2 tbsp butter
  • 20 oz frozen or 4 cups fresh corn kernels
  • 1 jalapeno, seeded and diced
  • 3 tbsp mayonnaise
  • 2 tbsp crumbled cotija cheese
  • ½ tsp chili powder
  • lime juice, to taste
  • salt, to taste
Instructions
  1. Place 2½ cups of the beans in a large bowl and mash until smooth. Stir in the eggs, 1 tbsp oil, cumin, salt, and cayenne. Add in the remaining beans, panko, poblano pepper and cilantro, stirring until combined.
  2. Form the burger mix into 6 patties. Heat 2 tbsp olive oil in a 12-inch nonstick skillet over medium heat until shimmering. Place 3 patties in the skillet. Cook until browned on both sides, about 4-5 minutes per side. Repeat with remaining oil and patties. Set aside.
For the elote salsa
  1. Melt the butter in a large skillet over medium high heat. Add the corn and jalapeno to the pan. Cook, stirring occasionally, for 8-10 minutes or until the corn starts to become charred.
  2. Remove from the heat. Stir in the mayonnaise, cotija cheese, and chili powder. Season to taste with lime juice and salt.
  3. Serve the burgers on buns topped with generous spoonfuls of the elote salsa.

spicy turkey taco salad with baja dressing.

spicy turkey taco salad with baja dressing. Making Thursday night tacos a thing, with this Spicy Turkey Taco Salad with Baja Dressing. Chipotle chili seasoned turkey taco meat, mixed with fresh greens, black beans, avocado, mango, and a little cheddar cheese too. Topped with tortilla chips for crunch, and finished with a creamy Baja style dressing that’s spicy and cooling. SO GOOD. If you’re looking for a non-boring salad, this is it! Raise your hand if you ate tacos at least once or twice a week growing up? My brothers and I were served ground beef tacos all the time as kids. Tacos were an easy, quick dinner that my dad could make in under 30 minutes. They were a dinner that every single one of his kids would eat. So all 7 of us… OK. So back then Asher was non-existent (which is soooo weird to think about life without Asher!), and Red was just a baby. So I guess it was more like 5 of his kids. Still, we all ate them, and we all loved them. Mom and I preferred hard shells wit...

blueberry macarons with blueberry mascarpone cream

blueberry macarons with blueberry mascarpone cream Blueberry macarons flavored with freeze-dried blueberry powder and filled with a barely sweet blueberry mascarpone filling. There’s no better time than the afternoon before your daughter’s first birthday party to figure out whether your ELECTRIC (<–GROAN) oven can handle macaron baking. I mean, it’s not like you have an 18-inch sheet cake and a sugar free triple layer smash cake and DINNER still to make, or anything like that. Yeah, about that….. But guys! Good news! My oven makes BEAUTIFUL macarons!!! I’m so happy to have found that out a month before we have to move out and I have to get used to a whole new oven. I have the best timing. Really. See above. Or maybe the oven has nothing to do with it and somehow by  not  making macarons for almost two years, I’ve somehow refined my skillz? Or born-again beginner’s luck? Whatever kind of hocus pocus was in the air that day, hey! I’ll take it. As I’ve mentioned only  ad ...

blog flog: baklava with alberta honey

blog flog: baklava with alberta honey Baklava is one of my favourite things—I love honey, and crisp phyllo as a carrier, with layers of chopped nuts. It’s something few of us consider making from scratch… it seems like a fancy, finicky thing, but the truth is, it’s not. Phyllo is very forgivable, so you can layer it with butter, honey, nuts and spices and however you shape and cut it, it will be delicious. (If it looks like a disaster, call it baklava mess, and serve it in a dish, with a fork and an extra drizzle of honey, as if you intended to do it that way all along.)

EDIBLE COOKIE DOUGH

EDIBLE COOKIE DOUGH Edible Cookie Dough recipe with no eggs is better than the cookies themselves! I love how this egg free cookie dough looks as good as it tastes! It’s the perfect addition to your favorite ice-cream. Or, simply a great snack! This edible cookie dough is 100% safe too eat. Because it has no eggs and no uncooked flour! I also stuffed it full of chocolate chips! So be sure to really restrain yourself from finishing it all right away. But if you run out, you can always make a new batch!  Use it in brownies or cupcakes. Add it to ice cream or a cheesecake. As long as there is enough room in your fridge or freezer for chocolate chip cookie dough! If you are like me, you maybe obsessed with cookies. Recently I have been obsessed with making cookie dough first thing in the morning. Basically, what I do now is get out of bed and start making cookies! Isn’t it what everyone else does?

crispy chipotle chicken tacos with cilantro lime ranch.

crispy chipotle chicken tacos with cilantro lime ranch. Weeknight style Cheesy Baked Crispy Chipotle Chicken Tacos with Cilantro Lime Ranch…and all the toppings. Because loaded tacos are just better. Ground chicken seasoned with a smoky chipotle chili spice mix, stuffed into hard shell tacos, topped with cheese, and oven-baked. These tacos are crunchy on the outside, but spicy and cheesy inside. Serve each taco with a creamy, cooling cilantro lime ranch sauce, and a mix of your favorite taco toppings. They come together in minutes and are so delicious…the perfect weeknight dinner. Bonus, the chipotle chicken is great as a leftover. Pile it high onto your favorite tortilla chips for some seriously delicious nachos or serve it up atop greens for a Mexican inspired salad. As a kid, tacos were a weeknight staple in our house. I’ve touched on this before, but my dad cooked tacos for dinner at least once or twice a week for multiple years straight. It probably wasn’t until I started ...
